Coffee Recipes: Pour-Over Method
Scott Rao – (old) V60 pour-over brew recipe:
Recipe: 1:15.5 ratio – 22g coffee with 340g water
- 22g coffee – in video Scott is using Colombian Cauca
- Wet filter – dump rinse water
- Put grounds – shake filter to even
- Pre-wet 3 x water (66g water)
- Excavating slur – break-up dry areas – all grounds wet in 10s. Bubbles tell co2 – all bubbles stop after 10s
- After 45s main pour – keep kettle at one height – spread pour over the slurry – up to 360g
- Gentle stir coffee off the walls up to 1:45min
- Spin the filter gently to prevent grounds and flatten the grounds – a few revolutions 2-3 times – we want a flat coffee bed
- Wait until water has passed – look for ‘sand’ look
Tip: fine ground until it is astringent then back-up 1/2 settings to get all the sweetness (watery and weak -> too coarse ; astringent -> too fine)
Tip: water filters leave them10min in water and tase water
Snag Ho Park – V60 pour-over recipe
Coffee temperature:
Dark Roast – 85-89 celsius
Light Roast – Specialty – 92-95 celsius (93 = 199.3F)
Recipe 1:15 ratio – 30g coffee with 500g water – 2:45min extraction – In video Snag Ho is using Ethiopian coffee
- 30g coffee with 60g water for pre-wetting/blooming
- Wait 30s – wait for co2 release
- Pour to 150g – stir with spoon on surface
- Slowly center pour to 500g – level in V60 remains the same. Coffee out = water in
- Stir 3 times
- Wait until 2:45min (less coffee shorter time)
Tim Wendelboe – V60 pour-over recipe
Recipe 1:15 ratio – 32.5g coffee with 500g water – 2:00-2:30min brew, 4min total
- 65g/l proportion – 32.5g for 500g
- Put coffee- shake filter – reset scale
- Pour 60g – start timer
- Coffee blooming – stir to get equally wet
- After 30s – start main pour – pour until 200g
- Stir
- Pour until 500g
- Total brew time: 2:00-2:30 min of pour time – up to 4min total time of drip
Chris Baca – V60 pour-over recipe
1:15 to 1:17 ratio – using 1:16 18g coffee with 288g water
- 30s bloom – bloom stir
- Total 288g water – last drop stir
- 3min total brew time – until last drop of water falls off the coffee
Tips: don’t water the filter, pour starting in the center and follow the color – color should be uniform – don’t touch the filter with water stream. Keep the water level down – add water as needed.
